Buffalo Burger with Purple Eggplant Jam

Slice the eggplant into rounds, salt, wait for an hour, rince and squeeze dry. Cook the rounds in canola oil, brown sugar, cumin, chopped coriander, mash with a fork. add cubes of apple, bits of orange flesh, a bit of lemon juice, and water. Cook until the water evaporates and the fruits are tender. In the meantime, mix minced Wyoming buffalo meat with onions. Add a bit of salt and pepper.



Form burgers and fry them on olive oil. Serve on a hot plate. Garnish with radish sprouts and banana.
